Update: I found this thread which states that conda is probably not the best way to install Psychopy nowadays: Yet another topic on installation & dependencies - #15 by jon. I think I’ll abandon trying to use conda for Psychopy. If conda is very unlikely to work with Psychopy, perhaps the documentation could be updated to reflect this?
