I want to ensure the participants’ IP addresses are not collected when I run the experiment online on Pavlovia.

What steps do I follow in order to ensure these IP addresses are not collected?

why don’t you try to run an experiment and check whether IP-addresses are collected?

Pavlovia (including surveys) doesn’t save participant IP addresses.
